Pule: A donkey milk cheese from Serbia
If Pule is so expensive, it is because it is not produced from cow’s or goat’s milk like most of the cheeses we eat, but from donkey’s milk. But the production of donkey’s milk is particularly tedious: the donkeys having particularly fragile udders, it is necessary to carry out small milkings every 2 to 3 hours (compared to 2 milkings per day in cow farms for example!). Worse, the daily production of milk for a donkey is only 0.2L on average, when a dairy cow manages to produce around 30L of milk per day!
This is why there is only one Pule cheese producer in the world. This is a farm in Serbia, located in the heart of the Balkans in the Zasavica reserve and which has only 140 donkeys dedicated exclusively to the production of this extraordinary cheese. Slobodan Simic, the cheesemaker behind this cheese, explains that given the difficulty of producing this cheese, its price would be even higher if its notoriety developed beyond the Serbian borders…And could even reach 5 000 euros per kilo. Let’s bet that this article does not lead to a massive increase in the price of Pule.
This cheese is particularly mild and is similar to many fresh cheeses. On the other hand, Pule cheese is particularly good for health because donkey’s milk is particularly rich in minerals (phosphorus and calcium in particular) and in vitamin C. It is also a milk that is particularly digestible because it contains very few fat. Finally, if you feel like it, know that donkey’s milk is also excellent for the skin thanks to its restorative and purifying properties. Cleopatra herself used to bathe only in donkey’s milk to preserve her skin… With Pule cheese, you may also have the most expensive moisturizer around!
