Blue Vanilla
The blue vanilla is a vanilla from RĂ©union from which even the envelope can be eaten. It is harvested at full maturity after 9 months on the plant to allow optimal development of aromas, before being refined over 2 years using unique know-how. Details below.
It can be used in a classic way by scraping the seeds, or in a more innovative way by cutting it into thin strips and adding them directly to your preparations. The blue vanilla thus makes it possible to consume the whole pod without wasting and without being limited to the sole use of the seeds.
Officially considered a living heritage product, this vanilla has also been awarded by international chefs. Storage: in an airtight glass jar, away from cold and heat, in a dry place. Any physical contact with other vanillas or cork or wood during the storage period is strongly discouraged. Shelf life: 2 years.
Please note of course that vanilla itself can be kept for several years without deteriorating despite the best-before date which is generally 1 or 2 years old. Blue vanilla can be kept for several years in the classic way, that is to say in an airtight glass jar, in a dry place, away from cold and heat. In case of unstable temperature (especially after transport), if you notice a slight condensation, simply clean the pods and the container.
We advise you to cut the pod into thin strips or fine pieces and incorporate them directly into your preparations. These can be eaten both raw and cooked. When cooking, consider maintaining the humidity of the pod by combining it with a sauce, cream, liquid, etc. Direct and dry cooking of the pod could dehydrate it and give a result similar to classic vanilla barks, that is to say fibrous and more difficult to chew.
