Felino Salami
Famous seasoned salami obtained from the mixture of pure Italian pork, to which only a little salt, black peppercorns and flavored with Malvasia dei Colli di Parma wine and garlic. To “create” his Felino salami, rider Umberto Boschi only uses the so-called “mince bench”, a precious cut – about 1.5 kg is in each pig. Just think that to produce a single salami you need a pig! Once stuffed into natural pork casing, the salami is tied by hand with natural fiber twine. At the end of natural maturation, Felino IGP salami captivates the senses with a delicate aroma and a mild, slightly spicy taste. The Felino salami must be sliced with a knife, with an oblique cut “like a beak of a flute”, and the thickness of the slice must be equal to the size of a grain of pepper.
Salame Felino I.G.P. is a traditional salami produced in the town of Felino, in the province of Parma, from which it takes its name, or in some other neighboring municipalities such as Langhirano and Sala Baganza. It is made from 100% Italian pork to which salt, pepper, natural flavors and white wine are added, following the rules of the Consorzio di Tutela del Salame Felino I.G.P. (Consortium for the protection of the sausage of Felino). The product is delivered wrapped in a special food paper for charcuterie in order to preserve it as well as possible.
The raw material comes strictly from pigs born, raised and slaughtered in Italy. Felino salami has a rich and aromatic taste with sweet notes, which is why this type of sausage is loved by children. Its composition is made of meat, salt and black peppercorns and it is matured for about 60 days.
